Remember ‘low & slow’. Try not to turn too often, it delays cooking. • Smoky Joe Herbs don’t just belong on your food. Throw a few herb branches or wet wood chips on the coals to get that real smoky BBQ taste. • Long soak Marinating: pop your meat/fish/veg in a bag with the marinade. Shake it up and massage it.
