Food, glorious food

kubba1.jpgFood is a great way to bring people together, and a group of women in Leicester have joined forces to bring their favourite recipes into one book.

Published by Christians Aware, Food, Festivals and Faith has mouth-watering dishes from Christians, Hindus, Jains, Buddhists and others.

Here is a recipe for kubbah, which is made by Christians in Iraq, and contributed by Mazin Farjo.
750g minced lamb
1 medium onion, finely chopped
2 tsp salt
1 1/2 tsp ground black pepper
3/4 tsp allspice
1/4 tsp grated nutmeg
3 cups borghal (bulgur) wheat
4 tbs flour
2 tbs olive oil
1 tsp ground cumin
1/4 tsp cayenne pepper

In a frying pan, cook a third of the meat with onion, salt and pepper to taste, 1/4 tsp allspice and nutmeg, then cook a little more until onion is soft. This is for the stuffing.

Place wheat in a food processor and blend to a dough. Add rest of meat, salt, pepper, allspice, as well as the flour, olive oil, cumin and cayenne, then blend until a smooth dough is formed, adding a little more flour or water if necessary for the required consistency.

Place a small ball of dough in the palm of your hand. Using a forefinger, press against the palm of your hand turning the dough until you have a shell of 1/2 cm thickness and about 7cm in diameter. Place a heaped tablespoon of stuffing into the hollow shell. Close end of shell, then form into a pattie or ball.

Place in boiling water with tomato puree and lemon juice (for sauce) and leave to cook about 30 minutes. Serve hot.
